Essential Ingredients

  • 100g fresh oysters
  • 1 squid, cleaned
  • 2 shiitake mushrooms
  • 1 stalk of green onion (scallion)
  • 2 heads of bok choy
  • 3 cloves of garlic
  • 5 cups of water (approx. 900ml)
  • 1 tbsp chicken stock
  • Pinch of salt
  • Pinch of black pepper
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp cooking wine (Cheongju)
  • 80g fresh noodles
  • A drizzle of sesame oil
  • A drizzle of cooking oil
  • 2 dried red chilies

Cooking Instructions

First, gently rinse the oysters in lightly salted water until the water runs clear. Drain them thoroughly in a sieve. Removing excess moisture is key to preventing a fishy smell and achieving a clean flavor.

Thinly slice the garlic to release its aromatic oils. Slice the fresh shiitake mushrooms into thin pieces as well.

Trim any dirty outer leaves from the bok choy, wash it well, and then cut each head in half lengthwise. Cut the green onion into 5cm (approx. 2-inch) segments. Cutting them longer allows for a deeper flavor infusion into the broth.

Cut the cleaned squid into bite-sized pieces that will be easy to eat in the noodle soup.

Heat a pan over medium heat and add a generous amount of cooking oil. Add the sliced garlic, green onion segments, and dried red chilies. Stir-fry slowly over medium-low heat until the aromatics release their fragrant oils. This step is crucial for building a flavorful base.

Once the aromatics are fragrant, add the sliced shiitake mushrooms and squid to the pan. Stir-fry quickly over high heat to seal in their freshness and flavor.

When the broth is boiling, carefully add the prepared bok choy and oysters. Cook for just another minute or so. Be careful not to overcook the oysters, as they can become tough; 1-2 minutes is usually sufficient.
