Main Ingredients

  • Flounder fillet 1/2 piece (approx. 180g)
  • Rice 1 measuring cup (approx. 150g)
  • Water 5 measuring cups (1L)
  • Mirin 1 Tbsp
  • Korean soup soy sauce 1 Tbsp
  • Salt to taste
  • Pepper to taste

Cooking Instructions

First, wash the rice thoroughly and let it soak for about 30 minutes. Soaking the rice will result in a smoother and creamier porridge.

Finely dice the carrot and thinly slice the green onion. Having these ingredients prepped beforehand will make the cooking process much smoother.

Lightly rinse the flounder fillet under running water, pat it dry, and then cut it into generous, bite-sized cubes of about 1.5-2 cm. Cutting the fish into larger pieces ensures a satisfying texture.

Add 1 Tbsp of mirin to the cut flounder pieces and gently mix. Let it marinate for about 5 minutes to remove any fishy odor and tenderize the flesh.

Heat 1 Tbsp of sesame oil and 1 Tbsp of cooking oil in a pot over medium-low heat. Add the sliced green onion, diced carrot, and about 2/3 of the marinated flounder. Sauté until the vegetables become slightly translucent and the outside of the flounder pieces start to turn opaque.

Once the flounder begins to cook, add the drained soaked rice and 1 Tbsp of Korean soup soy sauce to the pot. Stir-fry everything together for another minute. This step coats the rice grains in oil, helping to prevent them from clumping and creating a fluffy texture.

Pour in 5 cups (1L) of water and bring to a boil over high heat. Once the porridge comes to a rolling boil, reduce the heat to medium-low. Continue to cook, stirring occasionally with a spatula, for about 15-20 minutes, or until the rice grains are fully cooked and the porridge has thickened to your desired consistency. Make sure to stir frequently to prevent the rice from sticking to the bottom of the pot.

When the rice is tender and the porridge is well-thickened, add the remaining 1/3 of the flounder. Cook for another minute or so until the fish is just cooked through. Adding the remaining fish towards the end prevents it from breaking apart and keeps its delicate texture intact.

Finally, season with salt to your preference and add a pinch of pepper for extra flavor. Ladle the finished flounder porridge into bowls. Drizzle with the remaining 1 Tbsp of sesame oil and sprinkle with 1 Tbsp of sesame seeds (toasted or ground) for a rich, nutty finish.
