Tender and Savory Bracken Stir-fry (Gosari Namul Bokkeum)
Aromatic Mountain Vegetable: Delicious Bracken Stir-fry Recipe
Create a delicious bracken stir-fry using precious gosari, known as ‘beef from the mountains’ and believed to help eliminate bodily waste. This recipe brings out the deep flavors of fresh bracken, potentially harvested yourself.
Main Ingredients- Blanched Bracken (Gosari), 500g (pre-boiled and prepared)
Seasoning for Marinating- Perilla Oil (Deulgireum): 1 Tbsp
- Anchovy Sauce (Chamchi Aekjeot): 2 Tbsp
- Soy Sauce for Soup (Guk-ganjang): 2 Tbsp
- Plum Extract (Maesil Cheong): 1 Tbsp
Stir-frying Seasoning (Finishing)- Sesame Oil: 2 Tbsp
- Minced Garlic: 1 Tbsp
- Sugar: 1 tsp (adjust to taste)
- Chopped Scallions: 2 Tbsp
- Sesame Seeds (or crushed): 1 Tbsp
- Perilla Oil (Deulgireum): 1 Tbsp
- Anchovy Sauce (Chamchi Aekjeot): 2 Tbsp
- Soy Sauce for Soup (Guk-ganjang): 2 Tbsp
- Plum Extract (Maesil Cheong): 1 Tbsp

- Sugar: 1 tsp (adjust to taste)
- Chopped Scallions: 2 Tbsp
- Sesame Seeds (or crushed): 1 Tbsp
Cooking Instructions
Step 1
First, soak the blanched bracken in cold water for about 20 minutes to remove any impurities. Then, cut it into bite-sized pieces. (If using dried bracken, soak it in water for over 3 hours, then boil it, and soak it again in water for about 30 minutes before use. The ratio of dried bracken to rehydrated bracken by weight is approximately 1:8.)
Step 2
To the cut bracken, add all the marinating ingredients: 1 Tbsp perilla oil, 2 Tbsp soy sauce for soup, 2 Tbsp anchovy sauce, and 1 Tbsp plum extract. Gently massage the ingredients into the bracken with your hands, ensuring it’s evenly coated. This step allows the flavors to deeply penetrate the bracken.
Step 3
Now for the delicious stir-frying process. Heat a frying pan over medium heat and add 2 Tbsp of sesame oil. Add 1 Tbsp of minced garlic and stir-fry until fragrant. Once the garlic aroma is released, add the marinated bracken and stir-fry for about 5-7 minutes until the bracken becomes tender and develops a subtle brown hue. (It’s important to cook it until tender; if you used fresh bracken that was blanched, cook it a bit longer to reduce any bitterness.)
Step 4
Once the bracken is sufficiently stir-fried and tender, add 2 Tbsp of chopped scallions and 1 Tbsp of sesame seeds (or crushed seeds), and mix lightly. (If you used fresh bracken and find it a bit bitter, you can add 1 tsp of sugar to balance the flavor with a touch of sweetness.) When all ingredients are well combined, serve it beautifully on a plate. Your delicious and thoughtfully prepared bracken stir-fry is now complete!
