- Water, 1/2 cup
Seasoning Ingredients- Minced garlic, 1 Tbsp
- Soup soy sauce (guk-ganjang), 1/2 Tbsp
- Salt, a pinch
- Minced garlic, 1 Tbsp
- Soup soy sauce (guk-ganjang), 1/2 Tbsp
- Salt, a pinch
Cooking Instructions
Step 1
First, it’s crucial to remove the bitterness from the bellflowers. Prepare 200g of trimmed bellflower roots. Soak them in salt water (about 1 Tbsp of salt per cup of water) for about 10 minutes. While soaking, gently rub the bellflowers with your hands to help release their bitter compounds. Rinse them thoroughly and squeeze out any excess water.
Step 2
Let’s make the savory perilla seed sauce. In a bowl, combine 2 Tbsp of perilla seed powder with 1/2 cup of water. Mix well until smooth and no lumps remain. Set aside.
Step 3
Now, let’s start stir-frying. Heat 1-2 Tbsp of cooking oil in a preheated pan over medium-low heat. Add 2 Tbsp of minced green onion and 1 Tbsp of minced garlic. Sauté until fragrant. Be careful not to burn the garlic; letting the aromatics infuse the oil is key to a delicious flavor.
Step 4
Once the aroma of green onion and garlic becomes noticeable, add the squeezed bellflower roots to the pan. Stir-fry them together, ensuring they are evenly coated with the aromatics.
Step 5
When the bellflowers are partially cooked, add 1/2 Tbsp of soup soy sauce for seasoning. Soup soy sauce adds a deep umami flavor. Taste and add a pinch of salt if needed to adjust the overall seasoning to your preference.
Step 6
Finally, pour the prepared perilla seed mixture into the pan. Cover the pan and let it simmer for about 2 minutes. The sauce will thicken as it cooks, infusing the bellflowers with a rich, nutty flavor. Once everything is well combined, your delicious Bellflower and Perilla Seed Stir-fry is ready to be enjoyed! Serve hot with steamed rice.
