Spicy Potato Stew Ingredients

  • 1 liter (about 4 cups) water
  • 1 onion
  • Generous amount of Cheongyang chili peppers (to taste)
  • 2 Tbsp ‘Yeondu’ (Korean soup soy sauce or fish sauce alternative)
  • 2 Tbsp soy sauce
  • 1 Tbsp homemade soybean paste (doenjang)
  • 1 Tbsp red pepper paste (gochujang)
  • 1 packet enoki mushrooms
  • 1 large green onion (scallion)

Cooking Instructions

Peel the skin off the 8 medium potatoes and wash them thoroughly under running water.

Cut the potatoes into bite-sized pieces. It’s best to cut them into about 2-3 cm cubes so they don’t fall apart during cooking.

Pour 1 liter (about 4 cups) of water into a pot. Having enough broth ensures the potatoes cook evenly and the flavors meld well.

Chop 1 onion into large pieces. Onions add a refreshing sweetness and depth to the broth.
