This is a simple Three-Color Rice Bowl that anyone can easily make with basic ingredients. Here’s a recipe for a satisfying meal.
Main Ingredients- 2 bowls of warm rice
- 1 can of Spam (small size)
- 2 fresh eggs
- 1 cup of ripe kimchi (about 200g)
Kimchi Stir-fry Seasoning- 5 Tbsp kimchi brine
- 1 Tbsp oligosaccharide
- 1 Tbsp cooking oil
- 1 Tbsp sesame oil
- 5 Tbsp kimchi brine

Cooking Instructions
Step 1
First, prepare all the ingredients for the rice bowl. Crack the 2 eggs into a bowl and whisk them thoroughly with a fork or chopsticks, breaking up the chalazae. Dice the Spam into bite-sized cubes. If your kimchi is very wet, gently squeeze out some of the excess liquid and then chop it into bite-sized pieces. Preparing the ingredients in advance will help shorten your cooking time.
Step 2
Heat a wide pan over medium heat and coat it with 1 Tbsp of cooking oil. Carefully pour the whisked eggs into the pan.

As the eggs begin to cook, gently stir them with chopsticks or a spatula to make scrambled eggs. Avoid overcooking them; aim for a soft, fluffy texture so they remain tender when placed on top of the rice bowl. Transfer the finished scrambled eggs to a separate bowl for now.

Without adding extra oil to the same pan, place the diced Spam and cook over medium-low heat until golden brown and slightly crispy. The Spam will render its own fat, so you won’t need additional oil. Once browned, set the Spam aside in a separate dish.

Now, let’s make the stir-fried kimchi. Add 1 Tbsp of cooking oil back into the pan used for the Spam. Add the chopped kimchi and stir-fry over medium heat. Once the kimchi is slightly softened, add 5 Tbsp of kimchi brine and continue to stir-fry. The kimchi brine will add a savory depth and moisture.
Step 6
When the kimchi is well-stirred and tender, add 1 Tbsp of oligosaccharide for a touch of sweetness. Finally, drizzle in 1 Tbsp of sesame oil for a nutty aroma. Stir everything together quickly to maintain the kimchi’s crisp texture. Be careful not to overcook, or the kimchi will become mushy.
