Main Ingredients

  • 1 pack Beef Tripe (cleaned, approx. 200-300g)
  • 200g Beef Brisket (thinly sliced)
  • 200g Tteokbokki Rice Cakes (soft garaetteok or chewy milltteok work well)
  • 2 sheets Fish Cakes (square type)
  • 2 stalks Green Onions
  • 100g Cabbage (about 1/4 of a small head)
  • 1/2 Onion
  • 5 fresh Perilla Leaves
  • 4 cups Water (approx. 800ml)

Seasoning Ingredients

  • 4 Tbsp Fine Gochugaru (Korean chili powder)
  • 3 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Sugar
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Mirin (or cooking wine)
  • Pinch of Black Pepper
  • 2 Tbsp Corn Syrup (for gloss and sweetness)

Cooking Instructions

Step 1

Prepare all the vegetables and fish cakes by slicing them into bite-sized pieces. Cut the green onions diagonally, thinly slice the onion and cabbage, and cut the square fish cakes into 2-3 pieces. Tear the perilla leaves into large pieces to add at the end. If your tteokbokki rice cakes are hard, soak them in cold water briefly.

In a small bowl, combine all the seasoning ingredients: fine gochugaru, gochujang, soy sauce, sugar, minced garlic, mirin, black pepper, and corn syrup. Mix them thoroughly with a spoon to create a smooth paste, ensuring there are no lumps.

In a wide pot or deep pan, add the sliced green onions, onion, cabbage, fish cakes, and tteokbokki rice cakes. Pour all the prepared seasoning paste over them. Add 4 cups of water, ensuring the ingredients are mostly submerged. Bring to a boil over high heat.

Once the seasoning broth starts boiling, add the prepared beef tripe and reduce the heat to medium. Simmer for about 5-7 minutes until the tripe is cooked through. Then, add the thinly sliced beef brisket, gently separating the slices so they don’t clump together, and cook until done. Beef brisket cooks quickly, so avoid overcooking.

Finally, add a generous amount of the torn perilla leaves and simmer for another moment to complete your delicious Beef Brisket and Beef Tripe Tteokbokki! Check if the rice cakes are tender. Taste the broth and adjust seasoning if needed. Serve immediately while hot for the best flavor.
