Ingredients for Rich & Hearty Tomato Beef Stew

  • 500g Pork shoulder or Beef (e.g., chuck, sirloin), cut into bite-sized pieces
  • 1/2 Onion, finely chopped
  • A small amount of the white part of a leek, thinly sliced diagonally
  • 2 Potatoes, peeled and cut into cubes
  • 10 cloves Garlic, thinly sliced
  • 250ml Water
  • 1 tsp Chicken stock (optional, enhances flavor)
  • 6-7 Tbsp Tomato purée or Tomato paste (use paste for a richer tomato flavor, purée for a milder one)
  • Pinch of Black pepper
  • Pinch of Salt
  • 2 Tbsp All-purpose flour
  • 1 Tbsp Butter
  • 1 Tbsp Olive oil
  • 1 Tbsp Cooking wine or Mirin (helps remove gamey odor from meat)
  • A sprinkle of Sesame seeds (for garnish)
  • 250ml Water (500ml total)

Cooking Instructions

First, let’s season the star ingredient: the meat. In a bowl, combine the pork or beef with a pinch of salt, a pinch of black pepper, and 1 Tbsp of cooking wine or mirin. Gently mix and let it marinate for about 10 minutes. The cooking wine will help tenderize the meat and reduce any gamey odors.

Next, sprinkle 2 Tbsp of all-purpose flour over the marinated meat. Mix gently to coat each piece evenly. This flour coating will prevent the meat from burning during searing and help thicken the stew to a lovely consistency.

Now, let’s start sautéing. Place 1 Tbsp of butter in a pot or deep pan over medium-low heat and let it melt.

Once the butter is melted, add 1 Tbsp of olive oil. Using both butter and oil helps prevent the butter from burning. Add the 10 slices of garlic and the diagonally sliced leek. Sauté for about 1 minute until fragrant, allowing the aromatic flavors to infuse into the oil.

Stir in 6-7 Tbsp of tomato purée or tomato paste for that rich tomato essence. Mix well to combine with the liquid, ensuring all ingredients are submerged.

Cover the pot and let it simmer gently over low heat for 10 to 15 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking to the bottom.

Once the potatoes are cooked and the stew has thickened, it’s time for the final touches. Garnish with a sprinkle of sesame seeds and a pinch of black pepper. Taste and adjust seasoning with salt if needed. For an extra layer of flavor, stir in 1/2 tsp of balsamic vinegar or regular vinegar for a delightful sweet and sour note.
