  • 3g Vanilla Sugar (or regular sugar)
  • 10g Cornstarch or Potato Starch

First, measure and prepare all the ingredients needed for your cloud bread. Keeping the egg whites cold will help achieve a stable meringue.

In a clean bowl, add the 3 egg whites. Use an electric mixer or whisk to beat them until large, foamy bubbles form. As the foam starts to build, gradually add the 35g of sugar and 3g of vanilla sugar in 2-3 additions, continuing to whip.

Whip until you achieve a stiff, glossy meringue. It should hold its shape and not slide out when the bowl is inverted. Add the 10g of sifted starch and gently fold it in using a spatula or the lowest speed setting on your mixer. Be careful not to deflate the meringue. Mix just until combined and no lumps of starch remain.

Divide the finished meringue into three equal portions. To two of the portions, add the pink and purple food coloring separately. Quickly mix each with a spatula or the lowest speed setting on your mixer until the color is evenly distributed and no streaks remain. Leave the third portion white.

Feel free to use any food coloring you like, and adjust the intensity by adding more or less color. You now have three colorful meringue mixtures ready to go.

Line an oven tray with parchment paper. Using a spoon or piping bag, carefully place the purple meringue onto the parchment paper in a round shape, filling the base of your planned cloud. Aim for a moderate thickness, not too thin.

Next, layer the pink meringue on top of the purple meringue, creating another round shape that slightly overlaps the purple layer. This layering will give the bread its cloud-like appearance.

Once all the meringue is layered, use a spatula or the back of a spoon to smooth the top into a rounded, cloud-like shape. Ensuring a consistent shape is key to the ‘cloud’ look.
