The Ultimate Stir-Fried Squid: A Must-Try Recipe

There’s nothing quite like homemade stir-fried squid! One day, I was craving some delicious squid over rice, but every place I tried left me disappointed. So, I decided to buy some squid myself and give it a go. The result was so incredibly delicious that now, I can’t imagine ordering it from a restaurant anymore! With this recipe, you’ll become a stir-fried squid master in no time.

Squid Marinade (Pre-seasoning)

  • 4 Tbsp Gochugaru (Korean chili flakes, fine)
  • 3 Tbsp Soy Sauce (Brewed)
  • 2 Tbsp Mirin (or cooking wine)
  • 3 Tbsp Plum Extract
  • 1 Tbsp Sugar
  • 1 Tbsp Sesame Oil

Stir-Fried Squid Ingredients

  • 1 Squid (cleaned and prepared)
  • 1/2 Onion (sliced)
  • 2 Green Onions (cut diagonally)
  • 3 Handfuls Cabbage (cut into large pieces)
  • 3 Tbsp Cooking Oil
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sugar
  • 1 Tbsp Soy Sauce (Brewed)
  • A pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

The key to delicious stir-fried squid is marinating it beforehand! If you do this step right, the actual stir-frying will only take about 5 minutes. First, thoroughly wash the squid under running water and remove any unwanted parts like the beak, eyes, and innards. Cut the squid into bite-sized pieces (rings for the body, and desired lengths for the tentacles). In a bowl, combine all the ‘Squid Marinade’ ingredients, add the prepared squid, and gently mix with your hands until well coated. Let it marinate for 10-15 minutes.

Now, let’s start the stir-frying! Heat a pan over medium heat and add about three swirls of cooking oil. Once the oil is slightly hot, add the sliced onion, green onions, and minced garlic. Stir-fry until the onion becomes translucent, making sure not to burn the garlic. This step infuses the dish with aromatic flavors.

Push the sautéed vegetables to one side of the pan and increase the heat to high. Add the roughly chopped cabbage. Since cabbage releases a lot of water, it’s important to stir-fry it quickly over high heat to maintain its crispness and prevent the dish from becoming watery. Toss the ingredients vigorously.

Once the cabbage starts to look slightly translucent, pour 1 Tbsp of soy sauce and 1 Tbsp of sugar into the empty space of the pan. Let it bubble up slightly, then mix it evenly with the vegetables. Stir-frying quickly over high heat at this stage will impart a ‘wok hei’ (smoky flavor) to the vegetables, making your stir-fried squid even more irresistible. Cook for about 1 minute.

Now it’s time to add the marinated squid to the pan! Keep the heat on high and continue stir-frying. Squid can become tough if overcooked, so I recommend stir-frying for about 4 minutes, tossing occasionally. You’ll know it’s almost done when the squid turns opaque and the sauce is well-coated.

Here’s my favorite way to enjoy this stir-fried squid! Break a perfectly soft-boiled egg over the top, mix it all together, and wrap it in crisp roasted seaweed. This combination is absolutely divine! Feel free to add perilla leaves or lettuce for extra freshness.

Spoon the delicious stir-fried squid over a bowl of warm rice. If you like, break a soft-boiled egg yolk and mix it in for an extra creamy texture.
