  • 100g chicken (breast or thigh)

  • 2 bowls warm cooked rice
  • 2 handfuls fresh bean sprouts

  • 2 Tbsp oyster sauce
  • 2 Tbsp soy sauce
  • 2 Tbsp mirin (or cooking wine)

Cooking Instructions

Step 1

Prepare the Chicken: Boil water in a pot. Add the chicken and cook for at least 6 minutes until fully cooked. Remove the chicken from the water, let it cool slightly, then shred it into bite-sized pieces. This step ensures the chicken is tender and juicy.

Start the Stir-fry: Heat a frying pan over medium heat and add 2 tablespoons of cooking oil. Add the shredded chicken and chopped onion to the pan. Sauté until the onion becomes translucent and lightly golden brown. If you are using shrimp, add them at this stage and stir-fry together.

Adding Flavor: Once the onions are nicely caramelized and fragrant, add the warm cooked rice to the pan. Use a spatula to break up any clumps of rice. Pour in the oyster sauce, soy sauce, and mirin. Stir-fry everything quickly to ensure the sauce evenly coats every grain of rice. It’s important to get a good coating on the rice for maximum flavor.
