Nutty Honey Cake
Homemade Healthy and Sweet Honey Cake Recipe
This honey cake was made using a batch of fresh honey I recently purchased. It’s a healthy cake made with various nuts and honey instead of sugar, making it a guilt-free treat. The combination of nuts and honey is truly a match made in heaven, isn’t it? When I crave something sweet, I often mix honey with nuts for a sweet yet nutty snack that’s quite good for health. Making it into a cake feels like a delightful new experience. Let’s bake this honey cake packed with generous amounts of nuts!
Cake Ingredients- For 8 oval molds
- 60g All-purpose flour (approx. 1/2 cup)
- 60g Spelt flour (approx. 1/2 cup)
- 120g Honey (approx. 1/4 cup)
- 120g Eggs (room temperature, about 2 eggs)
- 30g Hot water (approx. 2 Tbsp)
- 30g Grapeseed oil (approx. 2 Tbsp)
- 1 tsp Baking powder
- Pinch of salt
- 120g Mixed nuts (e.g., walnuts, almonds, pecans, cashews, to taste)
Cooking Instructions
Step 1
First, combine the 120g of honey with 30g of hot water in a bowl. Whisk until smooth and no lumps remain. Once the honey is nicely dissolved, add the 30g of grapeseed oil and a pinch of salt, then mix thoroughly again to create a delicious base.
Step 2
Place the 120g of mixed nuts into a food processor or blender. Pour in the honey mixture prepared earlier. Process until the ingredients are finely ground into a smooth paste. This step creates the flavorful foundation of your batter, blending the nuttiness with the sweetness of honey.
Step 3
Now, add the 120g of eggs (approximately 2 eggs) to the finely ground nut and honey mixture.
Step 4
Pulse the food processor or blender just a few times to incorporate the eggs. Avoid over-mixing; you want to blend them in briefly until just combined to maintain the right texture.
Step 5
In a separate large bowl, sift together the 60g of all-purpose flour, 60g of spelt flour, and 1 tsp of baking powder. Sifting the dry ingredients ensures a lump-free batter and helps activate the baking powder for a lighter cake.
Step 6
Pour the ground nut and honey mixture into the bowl with the sifted dry ingredients. Using a spatula, gently fold the wet ingredients into the dry until just combined. Be careful not to overmix; stop as soon as you no longer see streaks of flour. Overmixing can lead to a tough cake.
Step 7
Use a scoop or spoon to evenly distribute the cake batter into the 8 prepared oval molds. Be sure not to overfill the molds, leaving some room for the cake to rise.
Step 8
Optionally, garnish the top of each cake with a few pieces of pecan or walnut. Place the filled molds into an oven preheated to 170°C (340°F) and bake for about 15-20 minutes, or until the tops are golden brown and a skewer inserted into the center comes out clean.
