Super Simple Red Onion and Cucumber Salad Recipe

Adding red onions to cucumber salad brings a wonderful pop of color and a delightful crunchy texture. This easy-to-make dish is perfect as a refreshing side for any meal or a light appetizer.
Main Ingredients- 1 fresh cucumber (approx. 150-200g)
- 1/2 small red onion (approx. 50g)
Seasoning- 1 Tbsp Korean soup soy sauce (Guk-ganjang or Jip-ganjang)
- 1 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
First, prepare the vegetables. Peel the red onion and slice it thinly into slivers. Wash the cucumber thoroughly under running water, trim off the ends, and then slice it diagonally about 0.5cm thick. This slicing method helps the dressing coat evenly and makes it easy to eat.

Step 2
Get a large bowl or serving dish ready for mixing. Add all the seasoning ingredients to the bowl: 1 tablespoon of soup soy sauce, 1 tablespoon of red pepper flakes, 1 tablespoon of fragrant sesame oil, and finally, 1 tablespoon of toasted sesame seeds for extra flavor. Gently mix these ingredients together with a spoon or spatula to create the dressing.

Step 3
Now it’s time to toss everything together. To ensure the dressing coats the vegetables evenly and prevents the cucumber from becoming watery, it’s best to add the vegetables in two batches. Add half of the sliced red onion and cucumber to the bowl with the dressing and gently mix. Then, add the remaining half and toss lightly until everything is well combined. Be careful not to overmix, as this can make the cucumber mushy.
