A wonderful chicken risotto that’s also perfect for baby food. This recipe combines tender chicken with fresh broccoli in a rich, creamy sauce, making it nutritious and flavorful. It’s a comforting dish for cooler days and can be made with simple ingredients for an impressive meal.
Ingredients- 80g fresh broccoli florets
- 80g tender chicken breast or thigh meat
- 1 bell pepper (any color)
- 1/2 medium onion
- 1 Tbsp minced garlic
- 1 Tbsp olive oil
- 2 cups (approx. 400ml) milk
- 2 bowls (approx. 400g) cooked rice
- 1 slice processed cheese
- 1 tsp dried basil
- Pinch of salt to taste
Cooking Instructions
Step 1
Let’s start by preparing the vegetables. Finely dice the onion and bell pepper after washing and removing the seeds. Separate the broccoli into small florets. (Tip: Briefly blanching the broccoli beforehand can enhance its vibrant color and tenderness.)
Step 2
Now, let’s enhance the flavor and remove any gamey smell from the chicken. Heat 1 Tbsp of olive oil in a pan over medium heat. Add the diced chicken and minced garlic, stirring continuously to prevent burning. Sauté until the chicken turns opaque on the outside.
Step 3
Once the chicken is almost cooked, add the diced onion and bell pepper to the pan. Stir-fry together until the onion becomes translucent and the bell pepper softens, releasing its sweetness.

It’s time to add the broccoli. Continue to sauté for another 1-2 minutes, allowing the vegetables to meld together. You’ll start to smell the fresh aroma of the broccoli.

This is the foundation of a delicious risotto. Pour in 2 cups of milk and add 2 bowls of cooked rice to the sautéed ingredients. Season with a pinch of salt. Stir with a spatula to break up any clumps of rice and cook over medium-low heat until it thickens to your desired consistency.

As the risotto reaches its perfect creamy texture, it’s time for the final touches. Just before turning off the heat, add 1 slice of processed cheese and stir until it melts smoothly.
