First, let’s prepare the garlic scapes. Wash them thoroughly under running water. Then, cut the garlic scapes into manageable pieces, about 2 to 3 cm long – roughly the width of two fingers. Cutting them into this size makes them easier to eat.

Now, it’s time to lightly blanch the garlic scapes. Bring a pot of water to a rolling boil. Once boiling, add 1/2 teaspoon of salt. Then, carefully add the cut garlic scapes and blanch them for only about 30 seconds to a maximum of 1 minute. The key is to keep them crisp, so avoid overcooking them.

After blanching, immediately drain the garlic scapes and rinse them under cold running water to cool them down. This step helps preserve their vibrant green color and enhances their crisp texture.
