Main Ingredients- 1 large egg (use a fresh one!)
- 1 serving of cooked rice (cold or warm rice works)
- 2 Tbsp finely chopped scallions (for a fragrant touch)
- 1/2 Tbsp soy sauce for soup (enhances savory flavor)
- 1/2 tsp salt (adjust to your taste)
- 1 Tbsp sesame oil (adds a nutty aroma)
- 1 Tbsp toasted sesame seeds (for added nuttiness and texture)

Cooking Instructions
Step 1
First, let’s make the base for our delicious egg porridge: the broth. Pour 4 cups of water into a pot. Add the dried anchovies (with insides removed) and the sheet of kelp. Bring to a boil over high heat, then reduce to medium-low and simmer for about 10 minutes to extract a deep, flavorful broth. Remove and discard the anchovies and kelp.
Step 2
Add 1 serving of cooked rice to the prepared broth and bring it to a simmer. Stir occasionally to prevent sticking to the bottom of the pot, and cook until the rice grains are softened and have started to break down. Once the rice is well-cooked and the porridge has thickened to your desired consistency, move on to the next step.
Step 3
When the rice is sufficiently broken down and the porridge has reached the right thickness, lightly beat 1 egg in a separate bowl to make a beaten egg mixture. Reduce the heat of the porridge to low, and slowly drizzle the beaten egg mixture in a circular motion over the surface of the porridge. Don’t stir immediately; wait for the egg to begin setting slightly before gently stirring it into the porridge.
Step 4
Once the egg is cooked to a soft consistency, stir in 1/2 Tbsp of soy sauce for soup and 1/2 tsp of salt to season. Finally, drizzle in 1 Tbsp of sesame oil and generously sprinkle the finely chopped scallions over the top. For an extra touch of flavor and visual appeal, sprinkle 1 Tbsp of toasted sesame seeds. Serve immediately while warm for a comforting and satisfying meal. Your egg porridge is ready!
