Main Ingredients- 1/2 squid (cleaned)
- 7 tteokbokki rice cakes (or your desired amount)
- Green onion, as needed (chopped)
Seasoning Ingredients- 2 Tbsp soy sauce (or seasoned soy sauce)
- 1.5 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- 1 Tbsp minced garlic
- Pinch of black pepper
- 2 Tbsp xylitol sugar (or regular sugar)
- 1 Tbsp rice syrup (or corn syrup, for gloss and sweetness)
- Pinch of sesame seeds (for nutty flavor)
- 1 Tbsp sesame oil
- Canola oil (or cooking oil), as needed
- 2 Tbsp soy sauce (or seasoned soy sauce)
- 1.5 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- 1 Tbsp minced garlic

- 1 Tbsp rice syrup (or corn syrup, for gloss and sweetness)

Cooking Instructions
Step 1
First, clean the squid and cut it into bite-sized pieces (about 1-2 cm). Prepare the tteokbokki rice cakes and place both the squid and rice cakes into a pot. Add just enough water to barely cover the ingredients.
Step 2
Bring to a boil over medium heat and blanch the squid for about 1-2 minutes until it’s lightly cooked. Be careful not to overcook, as it can become tough.
Step 3
Drain the blanched squid and rice cakes thoroughly in a colander. This step prevents excess water from forming later during stir-frying and helps the sauce adhere better.
Step 4
Transfer the drained squid and rice cakes to a stir-fry pan. Add a generous amount of the chopped green onions, 1 Tbsp minced garlic, 1.5 Tbsp gochugaru, a sprinkle of sesame seeds, 1 Tbsp sesame oil, 2 Tbsp soy sauce, 2 Tbsp xylitol sugar, and a pinch of black pepper.
Step 5
With the heat turned off, gently toss and mix everything together using your hands or a spatula until the sauce is evenly distributed among the squid and rice cakes. Ensuring the seasoning coats everything well is crucial.
Step 6
Add a moderate amount of canola oil (or cooking oil) to the pan and reduce the heat to low. Add the seasoned squid and tteokbokki to the pan and stir-fry for about 5 minutes, stirring continuously to prevent sticking. Finally, add 1 Tbsp of rice syrup and stir-fry briefly until glossy.
