  • 1 Fresh Pork Liver (about the size of a man’s fist)
  • 4 Cheongyang Peppers (spicy Korean peppers)
  • 4 Cloves Garlic
  • 1/2 Tbsp Salt
  • 1 Tbsp Soy Sauce

First, prepare the pork liver, which is about the size of a man’s fist. Rinse it thoroughly under running water, then slice it thinly to about 0.5 cm thickness. After slicing, cut each piece in half again to create bite-sized portions. This slicing method helps the seasoning penetrate evenly and improves the texture during cooking.

Remove the stems from the Cheongyang peppers, deseed them, and then thinly slice them. Peel the garlic cloves and slice them thinly (or mince them if you prefer). Adjust the thickness to your liking.

Heat a generous amount of cooking oil in a pan over medium heat. Once the oil is sufficiently hot, add the sliced garlic. Stir-fry the garlic, being careful not to burn it, until it becomes golden brown and releases a fragrant aroma. This step infuses the oil with garlic’s flavor, significantly enhancing the dish’s overall taste.

Once the garlic is nicely sautéed, add the pre-sliced pork liver to the pan and stir-fry over high heat. Stir quickly to prevent the soy sauce from sticking to the bottom of the pan, ensuring the seasoning coats the pork liver and vegetables evenly.
