Ingredients

  • 2 Eggs
  • 1 Tbsp Oyster Sauce
  • Pinch of Salt
  • 1/2 bunch Green Onions (chopped)
  • 1 pack Instant Rice (e.g., Hetbahn)
  • A little Butter (for extra richness)

Cooking Instructions

Step 1

In a large bowl, crack 2 eggs and add a pinch of salt. Whisk well. Add 1 pack of warmed instant rice and break up the rice grains with chopsticks or a spatula, mixing thoroughly with the egg mixture. It’s important to coat each grain of rice with the egg mixture. (Tip: If the rice is too cold, it clumps easily, so slightly warming it up beforehand is recommended.)

Step 2

Preheat a frying pan over medium-low heat. Add the chopped green onions and stir-fry gently until fragrant, creating scallion-infused oil. (Tip: Frying on high heat from the start will burn the scallions quickly, so slowly drawing out their aroma over low heat is the key.)

Step 3

Once the scallion oil releases a delicious aroma, turn the heat up to ‘high’. Add the rice coated with the egg mixture to the pan. It’s best to use a hot pan to ensure the rice fries up nicely and becomes fluffy.

Step 4

Maintaining high heat, continuously stir and fry the rice with a spatula. Once the rice grains become fluffy and the ingredients are well combined, add 1 tablespoon of oyster sauce and a little butter to enhance the flavor. (Tip: Adding the oyster sauce to one side of the pan and then stir-frying with the rice can create a deeper flavor.)

Step 5

Keep stirring to prevent the rice from burning, and quickly stir-fry over high heat until it reaches your desired level of doneness. The fried rice is ready when the grains are fluffy and all ingredients are well blended.

Step 6

Serve the warm and delicious egg fried rice in a bowl and enjoy! (Tip: It tastes even better when paired with kimchi or pickled radish.)
