When you have a whole head of cabbage, you can enjoy it for a long time and try various dishes! Thinking of a way to eat plenty of cabbage, which is good for dieting and health, I decided to make cabbage pizza. I shredded the cabbage, mixed it with eggs, and fried it to use as a pizza crust instead of traditional dough. Then, I topped it with sweet and delicious sweet corn, leftover vegetables from the fridge, and tomato sauce, finished with a generous layer of mozzarella cheese. This cabbage pizza is not only colorful and appetizing with the sweet corn but also incredibly tasty with its crisp texture. Most importantly, it’s a dish that lets you enjoy various vegetables while prioritizing your diet and health. The sight of the melting mozzarella cheese is always mouthwatering. The pizza is packed with a rich flavor from the colorful vegetables and the cheesy goodness, and the cabbage-egg base is so satisfying that just 1-2 slices will leave you feeling full, without the guilt. I enjoyed it for breakfast, but it would also be great as a snack or an appetizer.

Ingredients

  • 300g Cabbage
  • 3 Eggs
  • 3 Pinches of Salt (approx. 5-6 grinds from a grinder)
  • 1/2 Sweet Corn Cob, kernels removed
  • 3 Cherry Tomatoes
  • 1 Mini Carrot (approx. 5cm)
  • 2 Vienna Sausages
  • 1/5 Yellow Bell Pepper
  • 1/5 Red Bell Pepper
  • 3 Tbsp Tomato Sauce
  • 100g Mozzarella Cheese

Cooking Instructions

First, prepare your toppings. Carefully cut the kernels off the sweet corn cob. Finely dice the mini carrot, cherry tomatoes, bell peppers, and Vienna sausages into small, bite-sized pieces. Having all your ingredients prepped will make the cooking process much smoother.

Next, prepare your tomato sauce base. You can use a homemade tomato soup or a ‘witch’s soup’ if you have it, or simply use your favorite store-bought tomato sauce. Choose the sauce that best suits your taste.

Thoroughly wash the cabbage. Then, soak it in water with a splash of vinegar for about 10 minutes to sanitize it. After sanitizing, finely shred the cabbage. Sprinkle about 3 pinches of salt (or about 5-6 grinds from a salt grinder) over the shredded cabbage and mix well. This step helps to draw out excess moisture, making the cabbage base firm.

In a bowl, combine the shredded cabbage with 3 whole eggs.

Add the remaining 2 pinches of salt to the cabbage and egg mixture. This amount of salt will enhance the natural flavors of the cabbage and eggs without being overpowering.

Using a spatula or your hands, mix the cabbage, eggs, and salt thoroughly until everything is well combined. Ensuring an even distribution of ingredients will help the pizza base hold its shape when cooking.

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Spread the cabbage and egg mixture evenly into a thin, large circle in the pan, creating your pizza crust.

Cover the frying pan with a lid and cook over medium-low heat for about 10 minutes, or until the bottom is golden brown and set. Carefully flip the ‘crust’ to cook the other side until golden brown. If you’re worried about it breaking, you can place a plate slightly larger than the pan on top, flip the pan and crust onto the plate, then gently slide the crust back into the pan.

Once the cabbage base is cooked, spread your chosen tomato sauce evenly over the surface. If you’re using tomato soup like I did, it might have some chunky bits, but a smooth store-bought sauce will give a cleaner finish.

Generously sprinkle mozzarella cheese over the tomato sauce. Then, artfully arrange your prepared toppings – the sweet corn kernels, cherry tomatoes, carrots, bell peppers, and Vienna sausages – over the cheese. You can use pre-cooked sweet corn or raw kernels; both work wonderfully.

Reduce the heat to low, cover the pan again, and let it cook for about 5 more minutes, or until the cheese is completely melted and bubbly, and the toppings are heated through. This gentle heat ensures everything melds together perfectly.

Your delicious Cabbage and Sweet Corn Pizza is ready! Slice it into servings and enjoy immediately while it’s warm and the cheese is perfectly melted. Enjoy the healthy and flavorful bite!
