Bulgogi is a dish you’ll never get tired of! Packed with both flavor and nutrition, it makes for a delightful meal. Today, we’re using thinly sliced sirloin ( Bulgogi-yong beef) to create a delicious beef bulgogi. We’ve added aromatic vegetables like onions and green onions for depth of flavor, and enoki mushrooms for a chewy texture and added nutrients. Marinated in a classic soy sauce-based mixture, this beef bulgogi soaks up the seasoning beautifully when stir-fried, resulting in an incredibly flavorful dish.   • Thinly sliced beef for bulgogi (sirloin recommended) 2 cups (approx. 300-400g)
  • 1/2 onion, thinly sliced
  • 1/2 green onion, cut diagonally
  • 1 bunch enoki mushrooms, trim the base and separate strands

Golden Bulgogi Marinade

  • 6 Tbsp soy sauce
  • 2 Tbsp mirin (or cooking sake/rice wine)
  • 2 Tbsp sugar
  • 2 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • 1/2 Tbsp sesame seeds, lightly crushed or whole

Cooking Instructions

First, prepare 2 cups of thinly sliced beef, ideally sirloin cut for bulgogi. Sirloin is tender and flavorful, making it perfect for this dish. Place the beef in a large bowl. Add all the Golden Bulgogi Marinade ingredients: 6 tablespoons of soy sauce, 2 tablespoons of mirin, 2 tablespoons of sugar, 2 tablespoons of sesame oil, 1 tablespoon of minced garlic, and 1/2 tablespoon of sesame seeds. Gently mix everything together with your hands, ensuring the marinade coats the beef evenly. Let the marinated beef rest in the refrigerator for at least 30 minutes. This allows the flavors to penetrate the meat, making it much more tender and delicious.

Next, prepare the vegetables that will add aroma and texture. Thinly slice half an onion. Cut half a green onion diagonally into bite-sized pieces. Trim the woody base off the enoki mushrooms, rinse them lightly under running water, gently shake off excess moisture, and separate the strands. Having your vegetables prepped beforehand will make the cooking process much smoother.

Now, let’s start cooking! Heat a pan over medium heat with just a little bit of cooking oil (about 1/2 teaspoon). Add the sliced onions and diagonally cut green onions first and stir-fry them briefly. Sautéing the aromatic vegetables first will release their natural sweetness, enhancing the overall flavor of the bulgogi. Cook them just until they start to turn translucent.

Once the vegetables begin to release their fragrant aroma, add the marinated beef to the pan. It’s important to gently loosen the beef with chopsticks or a spatula as you stir-fry, preventing it from clumping together. Cooking over medium heat, rather than high heat, helps the beef cook evenly and stay tender without burning.

As the beef starts to change color and cook through, add the prepared enoki mushrooms. Enoki mushrooms cook very quickly, so be careful not to overcook them. Stir-fry everything together gently until the enoki mushrooms have softened slightly and the beef is fully cooked.
