- 1 Tbsp Sesame Oil
- 1 Tbsp Soy Sauce for Soup (Guk-ganjang)
- 1 Tbsp Minced Garlic
- Sesame Seeds, to taste
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
First, prepare 100g of dried mulberry leaves. Soak the dried leaves in cold water for at least 30 minutes until fully rehydrated. Once softened, place the soaked leaves in boiling water and boil for about 10 minutes until tender. If the leaves are still tough, you can extend the boiling time slightly.
Step 2
After boiling, immediately rinse the mulberry leaves under cold water to cool them down. While rinsing, gently feel the leaves and remove any tough stems for a more pleasant texture. This step ensures the dish is tender and enjoyable.
Step 3
Squeeze out excess water from the rinsed mulberry leaves and chop them into bite-sized pieces. In a bowl, combine the chopped leaves, 1 Tbsp of minced garlic, and 1 Tbsp of soy sauce for soup. Gently mix and massage the ingredients with your hands, ensuring the seasoning is evenly distributed.
Step 4
Let the seasoned mulberry leaves sit for about 10 minutes. This resting period allows the flavors to meld and penetrate the leaves, enhancing the overall taste of the dish.
Step 5
Heat a pan over medium-low heat. Add the marinated mulberry leaves and stir-fry until lightly cooked. Once the leaves are sautéed, add shiitake mushroom powder (optional, for added umami), 1 Tbsp of sesame oil, and a sprinkle of toasted sesame seeds. Stir-fry briefly to combine everything, finishing your delicious dried mulberry leaf stir-fry.
Step 6
Mulberry leaves are a highly nutritious ingredient, boasting a higher protein content than many other leafy vegetables. Enjoy this healthy and flavorful mulberry leaf dish to enrich your meals!
