- Scallion 1/2 stalk
- Onion 1/2
- Whole garlic cloves 8
- Whole peppercorns 1/3 tsp
Seasoning Ingredients- Soy sauce 10 Tbsp (approx. 80g)
- Gochugaru (Korean chili flakes) 3 Tbsp (approx. 30g)
- Sugar 2 Tbsp (approx. 20g)
- Gochujang (Korean chili paste) 1 Tbsp (approx. 20g)
- Mirin (rice wine) 3 Tbsp (approx. 20g)
- Minced garlic 1 Tbsp (approx. 10g)
- Minced ginger a pinch (approx. 2g)
- Black pepper to taste

Cooking Instructions
Step 1
Begin by preparing 1kg of pork spare ribs. Soak them in cold water for about 30 minutes to remove excess blood. This crucial step ensures a clean flavor without any gamey odor.
Step 2
Prepare the king oyster mushrooms by slicing them lengthwise into thick strips. Cut the scallion (1/2 stalk) into large diagonal pieces, and slice the onion (1/2) into thick strips. Cutting them this way helps them retain their shape and texture during cooking.
Step 3
Now, let’s make the flavorful sauce. In a bowl, combine 10 Tbsp soy sauce, 3 Tbsp gochugaru, 2 Tbsp sugar, 1 Tbsp gochujang, 3 Tbsp mirin, 1 Tbsp minced garlic, a pinch of minced ginger, and a bit of black pepper. Mix everything thoroughly. Preparing the sauce in advance allows the flavors to meld beautifully.
Step 4
After draining the ribs, gently scrape off the thin membrane from the back of each rib using a knife. Removing this membrane results in much more tender ribs that absorb the sauce better. Then, separate the ribs into individual pieces.

Place the prepared ribs in a large pot and cover them generously with water. Bring to a boil over high heat. Boiling the ribs briefly like this helps to remove any remaining impurities and blood.

Once the ribs are tender, remove them from the pot. Strain the cooking liquid through a sieve to collect the clear broth. This broth will be used to enhance the flavor of the final dish.
