Main Ingredients

  • 300g Imported Beef Chuck
  • 3 King Oyster Mushrooms
  • 6 Scallions

Beef Marinade Ingredients

  • 30g Minced Onion (approx. 1/8 small onion)
  • 35g Minced White Parts of Green Onion (approx. one 8cm stalk)
  • 15ml Minced Garlic (1 Tbsp)
  • 15ml Cooking Wine or Mirin (1 Tbsp)
  • 15ml Honey (1 Tbsp)
  • Pinch of Black Pepper (2 shakes)

Stir-fry Seasoning Ingredients

  • 30ml Soy Sauce (2 Tbsp)
  • 15ml Sesame Oil (1 Tbsp)

Garnish

  • Toasted Sesame Seeds, as needed
  • Chopped Scallions (reserved from above)

Cooking Instructions

Step 1

First, finely mince about 1/8 of a small onion. Prepare the green onions by mincing one 8cm stalk of the white part and two 8cm stalks of the green part. Having your vegetables prepped beforehand will significantly speed up the cooking process.

In a large bowl, combine the 300g of beef chuck with the minced onion, minced green onions, 1 Tbsp minced garlic, 1 Tbsp cooking wine, 1 Tbsp honey, and 2 shakes of black pepper. Gently mix everything together to ensure the beef is evenly coated. Let the beef marinate in the refrigerator for at least 55 minutes. The enzymes in the onion and green onion will help to tenderize the meat beautifully.

While the beef is marinating, prepare the 3 king oyster mushrooms. Slice the stems about 0.5cm thick diagonally, and quarter the caps. Measure out 2 Tbsp of soy sauce and 1 Tbsp of sesame oil. Finally, chop the remaining scallions into 2-3cm lengths for garnishing.

Heat a pan over medium heat. Add the 2 Tbsp soy sauce and 1 Tbsp sesame oil, then add the marinated beef and stir to coat. Immediately add the sliced king oyster mushrooms and stir-fry for approximately 2-3 minutes, or until the beef is fully cooked. Cooking over medium-high heat for a short time is key to keeping the beef juicy and tender. Once cooked, turn off the heat, sprinkle generously with toasted sesame seeds and the chopped scallions, and give it a quick toss. Your delicious Mushroom Bulgogi is ready to serve!
