Main Ingredients

  • 1 packet of instant ramen
  • 50g sliced pork belly
  • 1 handful of bean sprouts (about 50g)
  • 20g butter (or 1 Tbsp)

Cooking Instructions

Finely chop half of the Korean green chili pepper, removing the seeds for a milder heat if preferred. Slice the green onion into roughly 5cm lengths.

Place the sliced pork belly (50g) into a heated pot over medium heat. Sauté until the pork belly is lightly browned and has rendered some of its fat. Be careful not to burn the meat.

Once the pork belly begins to cook, add 1 Tbsp of chili powder to the pot. Stir and cook for about 30 seconds to 1 minute, allowing the chili powder to bloom and release its aromatic oils, creating a vibrant red chili oil.

Pour in 550ml of water. It’s best to use the water amount recommended on your ramen package, but you can adjust it slightly based on your preference. Add the ramen soup base and vegetable flakes. Bring the broth to a rolling boil over high heat.

As soon as the broth boils vigorously, add the ramen noodles and half a handful of bean sprouts. The bean sprouts will add a delightful crunch and enhance the broth’s refreshing quality. Cover the pot and cook for about 4 minutes, or until the noodles are tender.

With about 30 seconds left of cooking, add the chopped green chili pepper, sliced green onion, and 1 Tbsp of minced garlic. Continue to boil for this short time to allow the fresh flavors of the vegetables and the pungency of the garlic to infuse into the broth.

Carefully transfer the finished Chan Chan Ramyeon into a serving bowl. Top the steaming ramen with 20g of butter (or 1 Tbsp). As the butter melts, it will enrich the broth with a creamy, savory depth.
