  • Cooking : Stir-fry
  • Servings : 1 serving
  • Difficulty : Anyone

Main Ingredients

  • Chicken breast 150g (1 piece)
  • Salt 1 pinch
  • Black pepper 1 pinch
  • Onion 1/2
  • Green onion 1/2 stalk
  • Bell pepper 1/4 (any color)
  • Egg 1
  • Cooking oil 2 Tbsp
  • Steamed rice 210g (1 bowl)

Seasoning

  • Soy sauce 3 Tbsp
  • Cooking wine (like Mirin) 2 Tbsp
  • Water 100ml
  • Minced garlic 1 Tbsp
  • Sugar 1/2 Tbsp

Cooking Instructions

Step 1

First, rinse the chicken breast lightly under running water and pat it dry. Cut it into bite-sized pieces, about 2-3cm. Cutting them too small can cause them to lose moisture when cooked, so maintaining a moderate size is recommended for juiciness.

Step 1

Step 2

Sprinkle a pinch of salt and a pinch of black pepper over the cut chicken breast to season it. This helps remove any gamey odor and allows the flavors to penetrate, making the chicken even more delicious.

Step 2

Step 3

Peel and wash the onion, then slice it into strips about 0.5cm thick. Slicing them a bit thicker than very thin will help retain a pleasant texture after cooking.

Step 3

Step 4

Chop the green onion finely, using both the white and green parts. The mild oniony aroma will enhance the overall flavor of the rice bowl.

Step 4

Step 5

Remove the seeds from the bell pepper and slice it into strips similar in thickness to the onion. Adding bell pepper not only makes the dish visually appealing but also boosts its nutritional value.

Step 5

Step 6

Crack the egg into a clean bowl. Lightly whisk it with a fork or chopsticks to break up the chalazae (the white strings) and prepare the egg. Whisking it just enough to combine the yolk and white, rather than beating it thoroughly, will result in a softer texture later on.

Step 6

Step 7

Now, let’s make the delicious sauce for the rice bowl! In a small bowl, combine 3 Tbsp soy sauce, 2 Tbsp cooking wine, 100ml water, 1 Tbsp minced garlic, and 1/2 Tbsp sugar. Stir well until the sugar is dissolved. This golden ratio sauce will elevate the taste of your rice bowl!

Step 7

Step 8

Heat 2 Tbsp of cooking oil in a frying pan over medium heat. Add the seasoned chicken breast and stir-fry until it’s lightly browned on all sides. It’s important to sear the chicken quickly to lock in the juices.

Step 8

Step 9

Once the chicken breast is partially cooked, pour in the prepared sauce. Add the sliced onion, green onion, and bell pepper to the pan. Let it simmer, stirring occasionally, until the sauce thickens and coats the ingredients.

Step 9

Step 10

When the mixture has simmered down to your desired consistency, gently pour the whisked egg over the ingredients. Avoid stirring immediately; let the egg cook gently over low heat until it’s softly set. A slightly runny yolk will add extra creaminess.

Step 10

Step 11

Place the warm steamed rice into a serving bowl. Freshly cooked, hot rice is essential for the best rice bowl experience.

Step 11

Step 12

Finally, top the rice with the flavorful chicken breast, vegetables, and egg mixture. Your wonderful chicken breast and egg rice bowl is now complete! For an extra touch, you can garnish with seaweed flakes or sesame seeds. Enjoy your meal!
