Essential Ingredients- Fresh squid
- 1 liter of cold water
- 1 tablespoon of coarse salt
Cooking Instructions
Step 1
Squid can spoil quickly, starting with the innards, and its color can change. Therefore, it’s crucial to clean and store it immediately to maintain its freshness.
Step 2
Locate the belly of the squid body. Near where the tentacles attach, you’ll find an incision. Carefully cut along this line with scissors to open up the body.
Step 3
Once the body is open, gently pull the tentacles away from the body to separate them. The innards should come out along with the tentacles.
Step 4
Remove the separated innards cleanly. Also, pull out the transparent cartilage (pen) remaining inside the body. Cut away the eyes of the squid and remove the hard beak from the mouth area.
Step 5
Take the separated squid tentacles and sprinkle them with 1 tablespoon of coarse salt. Gently rub them together. This helps remove any debris from the suckers or sticky mucus, ensuring cleaner tentacles.
Step 6
Rinse the cleaned squid tentacles and body lightly in a brine solution made with 1 liter of cold water and 1 tablespoon of coarse salt. This step helps remove any fishy smell and maintains freshness.
Step 7
After rinsing, pat the squid dry. Then, cut it into bite-sized pieces for easy use in cooking. You can slice the body into rings and cut the tentacles into appropriate lengths.
Step 8
Portion the prepared squid by part (e.g., body, tentacles) into single-serving sizes. Lay them flat in freezer bags, removing as much air as possible before sealing. Storing them spread out like this makes them easy to thaw and prevents them from sticking together. Freeze them, and they’ll stay fresh for a long time!
