  • 400mL Cooking Oil (neutral oils like canola or grapeseed are recommended)
  • 2 large Fresh Scallions (use both white and green parts)

Thoroughly wash the scallions and pat them completely dry. Slice them diagonally into approximately 0.5cm thick pieces. This slicing method increases the surface area exposed to the oil, allowing the scallions’ flavor and aroma to infuse more quickly and effectively.

Pour the 400mL of cooking oil into a heavy-bottomed pot. Heat the oil over medium heat until it just begins to simmer gently.

Once the oil is adequately heated, add all the sliced scallions to the pot. Reduce the heat to low and simmer gently, ensuring the scallions do not burn. Cook until the scallions turn a beautiful golden brown and release a fragrant aroma. This slow simmering process is key to drawing out the deep flavor. (Approx. 15-20 minutes)

When the scallions are nicely browned, turn off the heat. Crucially, do not cover the pot immediately! Place a sheet of paper towel or a clean kitchen cloth over the pot to absorb rising steam, and then place the lid loosely on top. This prevents condensation (which can dilute the flavor) from dripping back into the oil, allowing the scallion’s essence to fully permeate the oil. Let it sit and steep for about 10-15 minutes as it cools.

Carefully strain the infused scallion oil into a clean glass jar. To make pouring easier and prevent spills, consider using a silicone funnel or a strainer attached to the pot’s rim. Once cooled, store the scallion oil in the refrigerator. It’s a fantastic base for fried rice, seasoned vegetables, pasta dishes, meat preparations, and much more!
