  • Difficulty : Intermediate

Ingredients

  • 1 cup shredded chicken (from rotisserie chicken or cooked chicken breast, approx. 150g)
  • 3 Tbsp mayonnaise
  • 2 pinches salt
  • 2 pinches black pepper
  • 2 French rolls (or baguette)
  • 1 cup fresh salad greens

Cooking Instructions

Step 1

First, prepare the chicken. Using rotisserie chicken from Costco is very convenient. If you’re using frozen chicken breast, make sure it’s completely thawed before proceeding. Alternatively, you can boil and cook raw chicken breast. Once prepared, gently shred the chicken into bite-sized pieces, following the grain.

Step 1

Step 2

In a bowl, combine 1 cup of the shredded chicken with 2 tablespoons of mayonnaise, 2 pinches of salt, and 2 pinches of black pepper. Mix everything thoroughly until well combined. This will create a creamy and flavorful chicken salad filling.

Step 2

Step 3

Next, let’s prepare the bread. We’re using French rolls from Costco here, but baguettes or other types of bread work wonderfully too. Lightly toast the rolls in the oven until they are golden brown. Once toasted, slice them horizontally to create the base for your open-faced sandwiches.

Step 3

Step 4

Don’t forget the fresh greens! These add a lovely crispness to the sandwich. Wash your salad greens thoroughly and pat them dry. If you’re making smaller open-faced sandwiches, you can overlap a few leaves to create a nice, full layer.

Step 4

Step 5

Now, it’s time to assemble your open-faced sandwiches! Place the prepared bread slices on a plate. Spread a layer of honey mustard sauce (or your favorite dressing) evenly over the bread. Arrange a generous portion of salad greens on top of the sauce. Finally, spoon a good amount of the chicken salad mixture onto the greens. Your delicious and easy open-faced chicken sandwiches are ready to be enjoyed!
