Quick & Easy Sundubu Shakshuka with Pantry Staples
Simple Sundubu Egg-in-Hell
Whip up a delicious meal in no time with ingredients you already have at home! This recipe is perfect for a quick, satisfying dish.
Main Ingredients- 1 package of Sundubu (soft tofu, approx. 300-400g)
- Assorted vegetables (onion, bell peppers, mushrooms, etc.), chopped as preferred
- 80g Mozzarella or Cheddar cheese
- 3 fresh eggs
- 5 pieces of chicken tenderloin or breast, cut into bite-sized pieces
Seasoning & Sauce- 250g store-bought rosé sauce (add chili flakes if you like it spicy)
- Pinch of salt (to taste)
- 1 cup water (approx. 200ml)
- Chopped scallions or green onions, for garnish

Cooking Instructions
Step 1
First, prepare your assorted vegetables by washing them thoroughly and chopping them into bite-sized pieces. Also, cut the chicken tenderloin into similar sizes.
Step 2
If you enjoy olives, they are a great addition for extra flavor. Halve the olives before adding them.
Step 3
Heat a pan over medium heat. Add the chopped vegetables and chicken. Lightly season with salt and stir-fry until the vegetables become translucent and the chicken is cooked through. Ensure the chicken is fully cooked.
Step 4
Pour in the store-bought rosé sauce and 1 cup of water into the pan with the sautéed ingredients. Mix well. Bring to a boil over high heat, then reduce to medium-low and simmer for 2-3 minutes, allowing the sauce to meld with the ingredients.
Step 5
Once the sauce has slightly thickened, carefully divide the sundubu (soft tofu) into four portions and gently place them into the gaps in the pan. Be careful not to break the tofu as you place it.
Step 6
Crack the 3 fresh eggs into the spaces between the sundubu portions. Try to keep the yolks intact for a beautiful presentation.

Finally, sprinkle the prepared cheese generously over the sundubu and eggs. More cheese makes it even more delicious!

Cover the pan with a lid and cook over low heat for about 5-7 minutes, or until the cheese is melted and the egg whites are set. Garnish with chopped scallions or green onions for a fresh aroma and appealing color.

Serve your Sundubu Egg-in-Hell immediately while it’s hot! For children, serving it over rice makes a hearty and satisfying meal. It’s also delicious served with bread.
