Today, we’ll be making a special chewy tortilla dough from scratch and topping it with rich Gorgonzola cheese for a simple yet delicious pizza. Tortilla Dough Ingredients- 400g all-purpose flour
- 8g baking powder
- 200g lukewarm water
- 9g salt
- 25g sugar
- 15g vegetable oil
Cooking Instructions
Step 1
To begin making the chewy tortilla dough, measure and combine 400g of all-purpose flour and 8g of baking powder in a bowl. Sifting the flour twice will result in a finer dough.
Step 2
Add 25g of sugar to the sifted flour and mix lightly. Sugar adds flavor to the dough and aids in fermentation.
Step 3
Prepare 200g of lukewarm water and dissolve 9g of salt in it. Salt seasons the dough and helps develop gluten for a chewy texture.

Pour the lukewarm saltwater into the bowl with the flour mixture. The water should be warm to the touch, around 35-40°C (95-104°F), not too hot.

Using a spatula or spoon, mix the ingredients until no dry flour is visible. It’s okay if the mixture is still clumpy at this stage.

Once most of the dry flour has been incorporated, add 15g of vegetable oil and start kneading with your hands. Knead for about 5 minutes, folding and stretching the dough with the palm of your hand until it becomes smooth and elastic.

Once the dough is smooth, cover the bowl with plastic wrap to prevent it from drying out. Let it proof in a warm place at room temperature for 1 hour. The dough should rise to about 1.5 to 2 times its original size.

After the hour of proofing, gently punch down the dough to release some of the gas. Divide the dough into portions of your desired size and roll each portion into a smooth ball.

If you want your tortillas to be uniformly sized, use a kitchen scale to divide the dough into equal weights. This recipe should yield about 6 to 8 tortillas.

On a lightly floured surface, use a rolling pin to shape each dough ball into a thin, round disc about 10cm (4 inches) in diameter. Sprinkle a little extra flour to prevent the dough pieces from sticking together. Let the rolled dough rest for about 10 minutes; this resting period makes the dough more pliable.

After the rest, it’s time for the second rolling. Use the rolling pin to flatten each piece of dough thinly and spread it out to approximately 25cm (10 inches) in diameter, forming the pizza base. You can adjust the thickness to your preference, but a thinner base will cook faster.

Heat a dry skillet (no oil needed) over medium-low heat. Place one of the rolled tortilla bases in the hot pan and cook for a couple of minutes until lightly golden brown on the bottom. Flip and cook the other side until browned as well. Be careful not to burn it on excessively high heat.

Cooking the tortilla on the pan this way mimics the texture of Indian naan baked in a tandoor, achieving a slightly crisp exterior and a chewy interior. You can create a wonderful naan-style tortilla without a special oven.
