  • 3 square fish cakes
  • 2 plates of pickled Aralia root shoots

Egg Omelet Seasoning

  • 1 tsp salt
  • Pinch of black pepper

Carrot Stir-fry

  • A little cooking oil
  • A little salt

Fish Cake Braising

  • 0.5 Tbsp water
  • 0.5 Tbsp soy sauce
  • 0.5 Tbsp oligosaccharide

Cooking Instructions

Step 1

First, prepare 5 cups of cooked rice for 10 gimbap rolls. Use 5 cups of water for the rice. Whisk 14 eggs and cook them into thin omelets; you’ll need 10 omelets in total. Generous amounts of egg make gimbap extra delicious!

Step 1

Step 2

Spread the cooked rice evenly and thinly over a sheet of seaweed on a bamboo rolling mat. Be careful not to spread the rice too thickly, as this can cause the roll to break.

Step 2

Step 3

Layer the prepared egg omelet on top of the rice. Then, arrange the crunchy pickled Aralia root shoots, the stir-fried julienned carrots, and the braised fish cakes over the omelet. You can adjust the amount of each ingredient to your liking.

Step 3

Step 4

Using the bamboo mat, carefully roll the egg omelet first, enclosing the fillings. This initial roll helps to hold the fillings together and ensures a neater final shape for the gimbap.

Step 4

Step 5

Now, roll the entire gimbap tightly using the bamboo mat. Press down firmly as you roll to ensure the seaweed seam sticks well to the rice and fillings, creating a compact roll.

Step 5

Step 6

Once rolled, place the gimbap seam-side down. Lightly coat the surface of the gimbap with perilla oil or sesame oil using your hands; this adds a beautiful sheen and enhances the aroma. Sprinkle sesame seeds over the top for an extra nutty flavor.

Step 6

Step 7

Slice the gimbap into bite-sized pieces and enjoy! Experience the delightful combination of the slightly bitter yet savory pickled vegetables with the other ingredients.

Step 7

Step 8

For an added crunch and tang, consider serving these gimbap rolls with pickled radishes (danmuji) on the side.

Step 8

Step 9

If you have leftover pickled Aralia root shoots, try making pickled vegetable rice balls (jumeokbap). It’s a simple yet delicious way to use any extra pickles.
