Essential Ingredients

  • 500ml Jeongguk Guk Mul (Soybean Paste Drink)
  • 2 Mochi Rice Cakes
  • Sweetened Condensed Milk (to taste)

Cooking Instructions

Step 1

First, we’ll freeze the soybean paste drink. Prepare about half of the 500ml Jeongguk Guk Mul. Pour it into a cup or container and place it in the freezer. You can freeze it upright, but laying it flat makes it easier to break apart later if you plan to crush it.

Once the soybean paste drink is frozen solid, don’t take it out immediately. Let it sit at room temperature for about 5-10 minutes to slightly thaw. This makes it easier to break down the frozen block. You can scrape it with a spoon or fork, or shake and tap the container to release the frozen block and then mash it. Using a blender is also a quick way to get a smooth consistency.

To easily remove the frozen soybean paste from its container, carefully cut off the top part with scissors. This will make it much easier to take out the frozen block whole.

Invert the container with the top cut off and place the frozen soybean paste directly into your serving bowl. This will form the cool and creamy base for your bingsu.

Now, let’s prepare the toppings. We’re using chewy mochi rice cakes for a delightful texture. Cut the mochi into bite-sized pieces, about 4 or 6 portions per cake.

Arrange the prepared mochi pieces attractively on top of the soybean paste base. The chewy mochi will pair wonderfully with the sweet and nutty flavor of the soybean paste.

The soybean paste drink itself has very little sweetness, so it’s a good idea to add some. While honey is nice, sweetened condensed milk pairs exceptionally well, adding a creamy sweetness that complements the nutty flavor of the soybean paste. Drizzle it generously to your liking.
