Main Ingredients- 1 bunch fresh chives (approx. 100g)
- 1/2 medium carrot (approx. 50g)
- 1/2 medium onion (approx. 50g)
For Added Nutty Flavor- Sesame seeds, a pinch
- Sesame seeds, a pinch
Cooking Instructions
Step 1
First, thoroughly wash the fresh chives. After draining excess water, cut them into bite-sized pieces, about 3-4 cm long. Using fresh, good-quality chives is key to the salad’s vibrant flavor.
Step 2
Peel and wash the carrot, then julienne it into thin strips. Thinly slicing the carrot ensures it absorbs the dressing well and provides a pleasant texture when eaten with the chives. Avoid cutting them too thick, as this can prolong cooking time if needed.
Step 3
Peel and rinse the onion under running water. Similar to the carrot, julienne it into thin strips. If you prefer a milder onion flavor, you can soak the julienned onion in cold water for a few minutes; this will enhance its sweetness while reducing its sharpness.
Step 4
Now, let’s prepare the delicious dressing. In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp vinegar, 1 Tbsp gochugaru, 1 Tbsp plum extract, 1 Tbsp oligodang (for sweetness and gloss), 1/2 Tbsp fish sauce (for savory depth), and 1/2 Tbsp sesame oil. Whisk everything together with a spoon until well combined and there are no lumps. Ensure all ingredients are thoroughly blended.
Step 5
In a large bowl, add the julienned carrots and onions, along with the cut chives. Pour the prepared dressing over the vegetables. Gently toss and mix everything together with your hands. Be careful not to overmix or mash the chives; the goal is to coat the ingredients evenly with the dressing while maintaining their crispness.
Step 6
Finally, before serving, sprinkle a pinch of sesame seeds over the salad. The nutty aroma of the sesame seeds will enhance the overall flavor. Your delicious, sweet, and tangy chive salad is now ready! It’s perfect to enjoy with a warm bowl of rice, or as a refreshing side dish for grilled meats like pork belly or pork ribs.
