Today, we’re making Jeyuk Bokkeum, a beloved dish, using Chef Baek Jong-won’s recipe! It has a different charm compared to how I usually make it. The spicy and sweet sauce combined with tender pork makes it an irresistible rice thief. Let’s make this simple yet delicious stir-fried pork right now!

Main Ingredients

  • 1 lb (approx. 600g) Pork Shoulder (Jeonjisal)
  • 2 Korean Green Chilies (Cheongyang pepper)
  • 1 large Scallion (Leek)
  • A small amount of Carrot, julienned
  • 1 pack Enoki Mushrooms
  • A small amount of Mini King Oyster Mushrooms
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

Marinade Ingredients

  • 1 Tbsp Sugar
  • 1 Tbsp Mirin (or Rice Wine)
  • 1 Tbsp Minced Garlic

Stir-fry Sauce Ingredients

  • 1 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Fish Sauce (or Tuna Extract)
  • 3 Tbsp Corn Syrup (or Oligosaccharide)
  • 1 Tbsp Perilla Oil (or Sesame Oil)
  • 1 tsp Salt
  • 1 tsp Dasida (or Chicken Bouillon Powder)
  • A pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare about 1 lb (600g) of pork shoulder. Place the pork in a bowl. Add the marinade ingredients: 1 Tbsp sugar, 1 Tbsp mirin, and 1 Tbsp minced garlic. Mix well by hand and let it marinate for about 10 minutes. Marinating the pork makes it more tender and flavorful.

While the pork is marinating, prepare the vegetables. Slice the scallion diagonally. Finely chop the Korean green chilies. Julienne the carrot. Trim the ends of the mini king oyster mushrooms and halve them lengthwise. Separate the enoki mushrooms by cutting off the base.

Now, let’s make the stir-fry sauce that will bring out the deliciousness of the Jeyuk Bokkeum. In a separate bowl, combine 1 Tbsp gochujang, 3 Tbsp gochugaru, 2 Tbsp soy sauce, 2 Tbsp fish sauce, 3 Tbsp corn syrup, 1 Tbsp perilla oil, 1 tsp salt, 1 tsp Dasida, and a pinch of black pepper. Mix everything thoroughly to create the sauce. Ensure all ingredients are well combined.

Heat a deep pan or wok over high heat. Add the marinated pork and begin to stir-fry. The pork will start to release its own juices as it cooks. Stir occasionally to prevent the meat from sticking together.

Once the pork is almost cooked through, add all the prepared Jeyuk Bokkeum sauce to the pan. Stir-fry the pork and sauce together quickly until the sauce coats the meat evenly. Be mindful of the heat to prevent the sauce from burning.

When the sauce is well combined with the pork, add all the prepared vegetables (scallions, green chilies, carrots, mini king oyster mushrooms), except for the enoki mushrooms. Stir-fry everything together. Avoid overcooking the vegetables to maintain their crisp texture.

Stir-fry until all ingredients are well mixed and taste the dish. If it feels a bit bland, you can adjust the seasoning with a little more salt or Dasida to your preference. Chef Baek’s recipes are usually well-balanced, but seasoning can vary depending on ingredients and personal taste.

Finally, add the enoki mushrooms and stir-fry for just a moment longer. Enoki mushrooms cook very quickly, so avoid overcooking them, which can release excess water. Stir just until they are slightly wilted.

Turn off the heat. Drizzle with 1 Tbsp sesame oil and sprinkle with 1 Tbsp toasted sesame seeds. Give it a final gentle toss, and your delicious Baek Jong-won style Jeyuk Bokkeum is ready! Serve it over hot steamed rice for a delightful meal that the whole family will enjoy.
