Sometimes, you order takeout and end up with leftovers. Don’t let them go to waste! Transform leftover fried chicken into a delicious and satisfying fried rice for another wonderful meal. This recipe is perfect for a quick and hearty meal that the whole family will love.

Main Ingredients

  • 200g leftover fried chicken
  • 3 eggs
  • 2 bowls of cooked rice

Cooking Instructions

Dice the leftover fried chicken into bite-sized pieces (about 1-2 cm). Remove any bones and use mostly the meat.

In a bowl, whisk the 3 eggs with a pinch of salt until well combined. Whisking the eggs thoroughly will help them spread evenly without clumping in the fried rice.

Heat 3 tablespoons of cooking oil in a pan over medium heat. Add 1 tablespoon of minced garlic and sauté until fragrant, about 30 seconds. Then, add the diced chicken and stir-fry until it’s lightly crispy on the edges over medium heat.

Push the chicken to one side of the pan. Pour the whisked egg mixture into the empty space and scramble it. Once the eggs are about 70% cooked, mix them with the chicken. At this point, add 1 tablespoon of Yeondu (or soy sauce) to enhance the savory flavor.

Add 2 bowls of cooked rice to the pan. Use a spatula to break up any clumps and stir-fry everything together with the chicken and eggs until well combined. It’s easier to stir-fry if the rice is warm.

Once the rice is incorporated, pour 1 tablespoon of oyster sauce around the edges of the pan to add depth of flavor, and stir-fry to distribute evenly. Taste the fried rice and add a pinch of salt if needed to adjust the seasoning to your preference.

Transfer the finished chicken fried rice to a serving plate. Sprinkle with parsley flakes for an extra touch of color and flavor, if desired. Enjoy your delicious homemade chicken fried rice!
