Many people dislike eggplant because of its soft texture, but dried eggplant offers a wonderfully chewy and satisfying bite! I made stir-fried dried eggplant after a long time. I’m hoping that even the one person in my household who dislikes eggplant will enjoy this. This dish is perfect as a side for rice or even as a snack with drinks. Main Ingredients

  • Dried eggplant 50g

Seasonings & Others

  • Green onion (chopped) 1/2 cup
  • Minced garlic 1 Tbsp
  • Korean soy sauce (Guk-ganjang) 2 Tbsp
  • Sugar 1 Tbsp
  • Sesame oil (from perilla seeds) 1 Tbsp
  • Grapeseed oil (or cooking oil) 1 Tbsp
  • Sesame oil 1/3 Tbsp
  • Dried chili pepper 1/2

Cooking Instructions

Step 1

Prepare the dried eggplant. Rinse it lightly under running water and then soak it in enough water to cover for about 2 hours until softened. This process makes the eggplant tender and easier to cook.

Once the dried eggplant is softened, rinse it again thoroughly and squeeze out any excess water. In a bowl, combine the Korean soy sauce, minced garlic, and sugar. Gently mix the eggplant with these seasonings and let it marinate for about 10 minutes, allowing the flavors to penetrate the eggplant.

Heat a pan over medium heat. Add an equal amount of perilla seed oil and grapeseed oil (or cooking oil). Add the chopped green onions and stir-fry until fragrant, creating a flavorful green onion oil. This step significantly deepens the overall flavor of the dish.

Once the green onion oil is ready, add the marinated eggplant to the pan. Stir-fry gently, ensuring everything is evenly coated and the eggplant doesn’t stick or burn. Adjust the heat as needed.

When the eggplant is cooked to your desired tenderness, season with salt to adjust the taste if necessary. Finish by drizzling in the sesame oil and giving it a final mix. Turn off the heat and serve.
