Healthy & Delicious Avocado Kabocha Squash Salad Recipe
Hello everyone! Today, I’m sharing a recipe for a low-calorie, health-conscious ‘Avocado Kabocha Squash Salad’. This salad features a delightful harmony of soft kabocha squash and creamy avocado, offering a unique flavor with simple ingredients. It’s perfect as a satisfying meal or a wonderful side dish. Let’s make it together right now!
Main Ingredients- 1/2 Kabocha squash (medium-sized)
- 1/2 Avocado (ripe)
- 1 Tbsp Avomayo (or regular mayonnaise)
- 1 Tbsp Cream cheese (at room temperature)
- 2 Pinches Salt
- 1 Pinch Black pepper
Cooking Instructions
Step 1
To make the kabocha squash easier to cut, microwave it for about 3 minutes. This will soften the tough skin slightly, making it safer and simpler to slice. Be sure to follow this step to avoid any accidental cuts from trying to force it.
Step 2
Carefully halve the microwaved kabocha squash, then use a spoon to scoop out the seeds and stringy pulp from the inside.
Step 3
Place the prepared kabocha squash in a steamer basket and steam for about 15 minutes once the water is boiling. It’s crucial to cook it until it’s soft enough to mash easily.
Step 4
Since we’ll be mashing the kabocha, ensure it’s cooked until very tender. The skin will naturally separate as you mash, so removing as much of it as possible beforehand will result in a smoother texture.
Step 5
Once thoroughly cooked, cut the kabocha squash into manageable pieces for mashing and transfer them to a large bowl.
Step 6
Now, add the ripe avocado (halved, pitted, and peeled) to the bowl with the kabocha squash.
Step 7
Using a fork or a masher, mash the kabocha squash and avocado together until they are as smooth and creamy as possible. Aim for a texture with no large lumps for the best creamy consistency.
Step 8
If you don’t have Avomayo, you can substitute it with regular mayonnaise. However, using Avomayo offers a lower-calorie, healthier option and enhances the rich flavor of the avocado.
Step 9
Add 1 tablespoon of Avomayo to the mashed kabocha and avocado mixture and stir until well combined. Ensure all ingredients are thoroughly blended.
Step 10
Next, add 1 tablespoon of cream cheese for added creaminess and flavor, and mix it in. Blend until the cream cheese is smoothly incorporated.
Step 11
Finally, add 1 tablespoon of honey for a touch of sweetness and gently mix everything together. Then, season with 2 pinches of salt and 1 pinch of pepper to your taste. Your delicious Avocado Kabocha Squash Salad is now ready!
Step 12
This finished salad is incredibly delicious served alongside fresh greens. It also makes a wonderfully filling and nutritious meal when used as a topping for sandwiches! Enjoy it in various ways!
