Quick and Easy King Oyster Mushroom Stir-fry Recipe: A Flavorful Side Dish!

I used some homemade pork-infused soy sauce to quickly stir-fry these king oyster mushrooms. To balance the richness, I added plenty of spicy peppers for a zesty kick. Mushroom stir-fries are a favorite of my eldest son, so I often make them in various ways. He says this version, with added meat, is his absolute favorite! It seems adding meat really does make everything tastier, doesn’t it? 😉 This super simple mushroom stir-fry, made with leftover soy sauce, is a fantastic side dish for any meal. Give it a try!

Main Ingredients

  • 2 packs King Oyster Mushrooms (trimmed and prepared)
  • 1 bunch Chives (approx. 50g, cut into 4-5cm lengths)
  • 5 Cheongyang peppers (or red chili peppers) (finely chopped, seeds removed, and rinsed in cold water)

Seasoning Ingredients

  • 3 Tbsp Soy Sauce (preferably aged or seasoned)
  • 1/2 tsp Minced Garlic
  • 1 Tbsp Olive Oil (or cooking oil)
  • Sesame Oil (to taste)
  • Black Pepper (to taste)
  • Sesame Seeds (to taste)

Cooking Instructions

Step 1

First, trim off the tough, woody ends of the king oyster mushrooms. Gently separate any clustered mushrooms into bite-sized pieces.

Bring a pot of water to a rolling boil and add a pinch of coarse salt. (Adding salt helps maintain the mushrooms’ firm texture.)

Once the water is boiling, add the prepared king oyster mushrooms and blanch for about 30 seconds to 1 minute. Be careful not to overcook, as they can become mushy.

Immediately drain the blanched mushrooms and rinse them under cold water to cool them down. Using both hands, squeeze out as much excess water as possible. Draining well is crucial for a delicious stir-fry without excess liquid.

Heat the olive oil in a pan over medium-low heat. Add the minced garlic and sauté until fragrant, being careful not to burn it.

Once the garlic is fragrant, add the squeezed king oyster mushrooms to the pan and stir-fry them together. Ensure the mushrooms are evenly spread in the pan as they cook.

When the mushrooms are somewhat cooked, add the 3 tablespoons of aged soy sauce and stir well to combine. Let the soy sauce’s savory and umami flavors penetrate the mushrooms.

Finally, add the chives cut into long pieces and the finely chopped chili peppers. Stir-fry quickly over high heat. The goal is to lightly cook the chives and peppers so they retain a fresh, crisp texture without becoming soggy.

Turn off the heat. Drizzle in sesame oil, a pinch of black pepper, and sesame seeds to enhance the aroma and flavor. Toss gently to combine. (Adding sesame oil after turning off the heat preserves its fresh, nutty fragrance.)
