This recipe shows you how to tenderly boil beef shank in a rice cooker and then use the flavorful broth to make a delicious miso soup.

Main Ingredients

  • 1kg Beef Shank
  • 800g Water
  • 1 Tbsp Garlic Powder
  • 1 tsp Salt
  • 2 sheets Dried Kelp (Kombu)
  • 1 Tbsp Onion Powder
  • 0.5 tsp Ginger Powder
  • 60g Onion

Seasoning Ingredients

  • 2 Tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1 tsp Toasted Sesame Seeds
  • 2 Tbsp Vinegar
  • 2 Tbsp Honey
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare 1kg of fresh beef shank. Rinse it thoroughly and place it in your rice cooker. Add 1 tsp of salt, 2 sheets of dried kelp, 1 Tbsp of garlic powder, 1 Tbsp of onion powder, and 0.5 tsp of ginger powder. Pour in 800g of hot water that has just been boiled, enough to submerge the meat. Select the ‘Reheat’ function and run it three times for 9 minutes each, or use the ‘Steam’ function for 30 minutes. After steaming, keep the rice cooker on the ‘Keep Warm’ setting for an additional 20 minutes to allow the meat to finish cooking gently. For an even more tender result, you can repeat the steaming and warming process once more. (Tip: Boiling a larger batch at once is convenient for later use and helps save energy.)

Carefully remove the tender beef shank from the rice cooker and let it cool slightly. This makes it easier to handle.

Take about 200g of the boiled shank for a single serving. Slice it against the grain into bite-sized pieces. You can enjoy it as is, by dipping it into a sauce made from 1 Tbsp soy sauce, 1 Tbsp vinegar, and 1 tsp sesame oil.

If you prefer it tossed with a dressing, thinly slice 60g of onion and place it in a bowl. Add 2 Tbsp soy sauce, 1 tsp sesame oil, 2 Tbsp vinegar, a pinch of black pepper, 1 tsp toasted sesame seeds, and 2 Tbsp honey. Mix well to combine all the seasoning ingredients.

Take another 100g of the boiled beef shank and finely chop it along the grain into small pieces. Chopping it finely allows the seasoning to penetrate better, resulting in a richer flavor.

Add the finely chopped beef shank to the prepared dressing and gently toss everything together. This completes your flavorful beef shank salad, perfect to enjoy with a bowl of rice.

The remaining boiled beef shank from the 1kg batch can be stored in an airtight container in the freezer. This is perfect for making braised beef later, or you can thaw it and toss it with seasoning again for another delicious dish.
