Main Ingredients

  • 1 pack chicken breast (approx. 300g)
  • 1/2 onion
  • 1/2 carrot
  • 2 potatoes (medium size)
  • 500ml water
  • A little olive oil

Curry Seasoning

  • 3 Tbsp milk
  • 2 Tbsp ketchup
  • 2 pouches apple juice concentrate (or approx. 1/4 grated apple, optional)
  • 1 packet curry roux (approx. 100g)

Cooking Instructions

Step 1

Begin by preparing your ingredients. Peel and dice the onion (1/2), carrot (1/2), and potatoes (2) into roughly 1.5-2cm cubes. Cut the chicken breast (1 pack) into similarly sized pieces. Uniformly cut vegetables ensure even cooking.

Heat a pot over medium heat and add a swirl of olive oil (about two turns of the bottle). Once the oil is warm, add the diced onion, potatoes, and carrot. Sauté for about 3-5 minutes until the onions become translucent and fragrant, which brings out their natural sweetness. Then, add the chicken breast and stir-fry until it’s no longer pink on the outside.

Pour in 500ml of water. Bring the mixture to a boil over high heat, then reduce the heat to medium, cover the pot, and let it simmer for about 10-15 minutes, or until the potatoes and carrots are tender when pierced with a fork. Stir occasionally to prevent sticking.

Once the vegetables and chicken are cooked through, stir in 3 tablespoons of milk and 2 tablespoons of ketchup. Add the 2 pouches of apple juice for an extra layer of sweetness and depth (this is optional but recommended!). Lower the heat to low. Sprinkle in the packet of curry roux and stir continuously until it dissolves and the curry thickens to your desired consistency. Your delicious curry rice is now ready to be served over hot steamed rice!
