  • 5 fresh eggs

Fluffy Egg Omelet Ingredients

  • 2 Tbsp sugar
  • 2 Tbsp mirin (sweet rice wine)
  • 2 Tbsp sake (or more mirin)
  • 1/2 cup dashi stock (about 100ml)
  • Pinch of salt

Sauce Ingredients

  • 1 Tbsp whole grain mustard
  • Pinch of black pepper

Cooking Instructions

In a bowl, crack 5 fresh eggs. Add the ingredients for the omelet: 2 Tbsp sugar, 2 Tbsp mirin, 2 Tbsp sake, 1/2 cup dashi stock, and a pinch of salt. Whisk everything together gently until well combined. Ensure all ingredients are evenly mixed.

To achieve an exceptionally smooth and delicate texture, strain the egg mixture through a fine-mesh sieve twice. This step removes any unincorporated egg white or chalaza, resulting in a more custardy and uniform omelet.

Line an oven-safe dish with parchment paper. Carefully pour the strained egg mixture into the prepared dish. Bake in a preheated oven at 170°C (340°F) for approximately 20 minutes, or until the egg is set and cooked through. Baking time may vary depending on your oven. Alternatively, you can cook this gently in a non-stick pan over very low heat with a lid on.

Prepare your 2 slices of bread. On one side of each slice, spread a mixture of 1 Tbsp whole grain mustard and a pinch of black pepper. The subtle kick from the mustard and the aroma of pepper will beautifully complement the sweetness of the egg.
