Cooking Instructions
Step 1
To thoroughly wash the fresh broccoli, place the florets facing down in a bowl of cold water for about 10 minutes. This allows any hidden dirt or tiny creatures within the flower buds to loosen and be easily washed away under running water, ensuring a cleaner ingredient.
Step 2
Trim off about 1cm from the tough end of the broccoli stem. Then, use a peeler to remove the fibrous outer skin of the stem. Cut the stem and florets into bite-sized pieces, about 2-3cm. For the florets, break them apart into manageable sizes that are easy to pick up with chopsticks.
Step 3
Rinse the prepared broccoli thoroughly once more under running water. This extra rinse ensures a cleaner and more hygienic dish.
Step 4
Place the prepared broccoli in a steamer basket over boiling water and steam for just 3 minutes. Be careful not to overcook, as you want it to remain slightly crisp. Immediately plunge the steamed broccoli into cold water to cool it down; this helps preserve its vibrant green color and firm texture.
Step 5
Prepare the aromatics and vegetables for the stir-fry. Dice the carrot and onion into neat squares. Lightly smash the whole garlic cloves with the side of a knife and then slice them thinly (mince or slice). This method helps release more of their fragrance.
Step 6
If using frozen shrimp, rinse them under cold water to thaw. If using fresh shrimp, peel and devein them, then give them a quick rinse.
Step 7
Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Add the sliced garlic and stir-fry gently until fragrant, being careful not to burn it. The key is to release the garlic’s aroma slowly.
Step 8
Once the garlic becomes fragrant, add the shrimp and 1 tablespoon of cooking wine (like mirin or sake). Stir-fry together. The cooking wine helps to eliminate any fishy odor from the shrimp and enhances its flavor.
Step 9
When the shrimp are about halfway cooked and turning pink, add the diced carrots and onions to the pan. Stir-fry until the vegetables begin to soften slightly. Then, add 1-2 tablespoons of oyster sauce and stir everything together until well combined and the sauce coats the ingredients.
Step 10
Finally, add the blanched broccoli to the pan. Stir-fry quickly to ensure the sauce evenly coats all the ingredients. You can add a splash of water if the mixture seems too dry. (Tip: For a thicker sauce that clings better, you can add a cornstarch slurry. Mix 1 tbsp cornstarch with 2 tbsp water.)
Step 11
Once all ingredients are beautifully stir-fried, turn off the heat. Finish by drizzling in 1 tablespoon of sesame oil and sprinkling 1 tablespoon of toasted sesame seeds for added aroma and a glossy finish. Your delicious Broccoli Shrimp Stir-fry is ready! Serve it warm with rice for a satisfying meal.
