  • Chicken (boneless, skinless thighs or breast) 500g
  • Lettuce 1/2 head
  • Green onion 1/5 stalk (for grilling, optional)
  • Onion 1/3 (for sauce, optional)

For the Batter

  • All-purpose flour 3 Tbsp
  • Egg 1
  • Breadcrumbs 5 Tbsp

Prepare the Chicken: Rinse the chicken thighs (or breast) under cold water and pat them thoroughly dry with paper towels. To remove any gaminess, soak the chicken in milk for about 20-30 minutes, then drain and dry again. Trim any excess fat or sinew. Season lightly with salt and pepper for extra flavor before coating.

Fry the Chicken: Dredge the prepared chicken pieces in all-purpose flour, then dip them in a beaten egg. Finally, coat evenly with breadcrumbs. Heat oil in a wok or deep fryer to 170-180°C (340-350°F). Carefully add the chicken and fry until golden brown and crispy on all sides, ensuring it’s cooked through. Remove the fried chicken and place it on a wire rack or paper towels to drain excess oil.

Prepare the Lettuce: Wash the lettuce thoroughly under cold running water. Spin it dry or pat it gently with paper towels to remove excess moisture. Tear or chop the lettuce into bite-sized pieces. Ensuring the lettuce is dry will prevent the sauce from becoming watery.

Make the Yurinqi Sauce: In a saucepan, combine soy sauce, water, vinegar, sugar, and salt. Stir well. For a richer flavor, you can add chopped green onions and a piece of onion to the sauce and simmer over medium heat for about 10 minutes. After simmering, strain the sauce through a sieve to remove the solids, leaving a clear sauce. Once cooled, stir in the store-bought yuzu dressing and a pinch of pepper. Mix well until fully combined to create the delicious Yurinqi sauce. (Tip: A splash of yuzu juice or lemon juice can add extra brightness.)
