First, prepare 1 piece of dried pollack (Hwangtae-po). If it’s very dry and hard, soak it in lukewarm water for at least 20 minutes to soften it. Soaking makes the pollack more receptive to the marinade and improves its texture.

While the pollack is soaking, let’s make the delicious seasoning sauce. In a bowl, combine 2 tsp of soy sauce and 1 tsp of mirin (or cooking wine). This helps to remove any fishy smell and adds a savory depth.

Next, add 2 tsp of minced garlic, 1 Tbsp of cooking oil, 1 Tbsp of gochugaru (Korean chili flakes), and 1 tsp of gochujang (Korean chili paste). The gochujang adds a wonderful spicy and sweet flavor. For a touch of sweetness and a nice glaze, add a pinch of black pepper, 1 tsp of sugar, and 1 tsp of oligodang (corn syrup or rice syrup). Finally, stir in 2 tsp of sesame oil for a nutty aroma. Your flavorful Hwangtae Gui seasoning sauce is now ready!

Gently squeeze out any excess water from the soaked dried pollack. Carefully go through the pollack and remove any small bones that might still be present. Removing the bones ensures a pleasant eating experience.
