Ingredients

  • 1 bunch Minari (Water Parsley, approx. 100g)
  • 1/2 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
  • 1/2 Tbsp Minced Garlic
  • 1 pinch Salt
  • 1/2 Tbsp Sesame Oil
  • 1/2 Tbsp Toasted Sesame Seeds (or ground sesame seeds)

Cooking Instructions

First, wash the minari thoroughly. Trim any thick stems. Bring a pot of water to a boil, add 1 tablespoon of salt, and blanch the minari for about 20 seconds. Be careful not to overcook, as it will become mushy; the goal is to keep its vibrant green color.

Immediately rinse the blanched minari under cold running water to stop the cooking process and maintain its crispness. Gently squeeze out excess water with your hands. Then, cut the minari into bite-sized pieces, about 3-4 cm long. Cutting it too finely can diminish the texture.

Place the prepared minari in a mixing bowl. Add all the seasoning ingredients: 1/2 tablespoon of soy sauce, 1/2 tablespoon of minced garlic, 1 pinch of salt, 1/2 tablespoon of sesame oil, and 1/2 tablespoon of sesame seeds. Gently toss and mix the ingredients with your hands, ensuring the seasoning coats the minari evenly. Avoid vigorous mixing to keep the minari tender.
