Main Ingredients

  • 300g Boiled dried radish greens (squeezed dry)
  • 1/2 Daepa (Korean leek or large green onion)
  • 200ml Anchovy-kelp broth

Seasoning

  • 2 Tbsp Guk-ganjang (Korean soup soy sauce)
  • 1 Tbsp Fish sauce (or tuna extract)
  • 1 Tbsp Minced garlic
  • 2 Tbsp Perilla oil (deulgireum)
  • Toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

First, thoroughly squeeze out excess water from the boiled dried radish greens. Then, cut them into approximately 5cm lengths, making them easy to eat. Cutting them to a manageable size will make stir-frying much easier.

In a bowl, combine the prepared radish greens with 2 Tbsp of soup soy sauce, 1 Tbsp of fish sauce, 1 Tbsp of minced garlic, and 2 Tbsp of perilla oil for a nutty aroma. Gently massage the ingredients into the greens with your hands to marinate them well. Ensure the seasoning is evenly distributed for the best flavor.

Wash the daepa (Korean leek or large green onion) and thinly slice it crosswise. The fragrant aroma of the leeks will beautifully enhance the overall taste of the stir-fried radish greens.

Heat a pot over medium-low heat. Add all the marinated radish greens and stir-fry for about 2-3 minutes. This step helps to remove any potential ‘green’ smell and allows the seasonings to meld better. After stir-frying, pour in the 200ml of anchovy-kelp broth, cover the pot with a lid, and simmer over medium-low heat for about 5 minutes until the radish greens become tender.

Once the radish greens are tender, add the sliced daepa and toasted sesame seeds. Continue to stir-fry until the broth has reduced to a savory, sauce-like consistency. Taste the dish and add a tiny pinch of salt if needed to adjust the seasoning. Be careful not to over-salt.

Finally, finish by stir-frying until the broth remains slightly moist and saucy, rather than completely dried out. This creates a deliciously tender and flavorful siraegi bokkeum that perfectly complements rice.
