Ingredients

  • 3 Bellflower Roots (Doraji)
  • 2 Steamed Ginseng Roots (Susam)
  • 4 Dried Jujubes (Daechu)

Seasoning

  • 1 Tbsp Honey
  • 1 tsp Salt

Cooking Instructions

Wash the bellflower roots and ginseng thoroughly and peel their skins.

Thinly slice the prepared ginseng and bellflower roots into strips about 0.2 to 0.3 cm thick. Soak them in saltwater for 10 minutes to remove any bitterness.

Do not wash the jujubes with water. Instead, gently wipe the outside of the dried jujubes with a damp kitchen towel. (Washing dried jujubes can make them absorb water and become too moist, affecting the texture of the salad.)

Carefully cut around the pit of the jujube to remove it. Then, spread the jujube slices flat.

Slice the spread jujubes thinly, similar to the bellflower roots and ginseng, about 0.2 to 0.3 cm thick.

Drain the bellflower roots and ginseng that were soaked in saltwater. Pat them completely dry with paper towels or a clean kitchen towel to remove all excess moisture. This step is crucial for achieving the best texture and flavor.

In a bowl, combine the dried bellflower roots, ginseng, and jujubes. Add 1 tablespoon of honey and gently toss everything together until well coated. The honey will sweeten the mixture and add a lovely gloss.
