Main Ingredients

  • 1 stalk of green onion (use both white and green parts)
  • 2 eggs
  • 1.5 bowls of cooked rice (adjust quantity to your preference)
  • A small amount of chopped scallion greens (for garnish)

Cooking Instructions

Step 1

The beauty of this fried rice lies in its simplicity! With just fresh green onions and eggs, you can create a fantastic meal. I’ve prepared about 1.5 bowls of rice, a bit more than a standard half-bowl serving, perfect for a satisfying solo meal. Feel free to adjust the rice quantity to your liking. Warming up the rice beforehand helps it mix better and absorb flavors more effectively during cooking.

Step 1

Step 2

I’ve chopped about one stalk of green onion. This amount complements the rice nicely, allowing the onion’s fragrance to shine. After washing the green onion thoroughly, thinly slice both the white and green parts into pieces about 0.5 cm thick. The fresh aroma of the scallions will elevate the overall flavor of your fried rice.

Step 2

Step 3

Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Once the pan is warm, add the chopped green onions and sauté them until their fragrance is released. Cooking over medium-low heat prevents the onions from burning and helps them develop a gentle sweetness and aroma. Stir-fry for about 2-3 minutes until the onions become translucent and tender.

Step 3

Step 4

Now it’s time to cook the eggs. Add another tablespoon of cooking oil to the pan and increase the heat to high. Crack in the two eggs. Cook the eggs as if you’re deep-frying them, letting the bottom turn golden brown and sizzle. Cooking the eggs on high heat results in a fluffy yet rich texture and enhances their savory flavor.

Step 4

Step 5

Once the bottom of the eggs is nicely browned and the edges are slightly crispy, add the cooked rice to the pan. Use a spatula to gently break apart any clumps of rice and mix it thoroughly with the eggs. Ensure each grain of rice is coated. Breaking up the rice well is key to achieving a fluffy texture. The rice will be coated with the egg, making it wonderfully separate.

Step 5

Step 6

After the rice and eggs are well combined, add the sautéed green onions back into the pan. Stir-fry everything together for another 1-2 minutes until well incorporated. Now, let’s add the flavor! Pour 1 tablespoon of soy sauce around the edges of the pan. As it hits the hot pan, it will caramelize slightly, releasing a wonderful ‘wok hei’ or smoky aroma – this is the secret to great fried rice! Immediately add the half tablespoon of butter. The butter will melt, adding richness and coating the rice grains. Taste and adjust the seasoning with a pinch of salt if needed. (Tip: Adding oyster sauce will give it an extra umami kick, making it more like a savory noodle dish, so feel free to experiment!)

Step 6

Step 7

Transfer the delicious scallion fried rice to a serving bowl. Garnish with the chopped scallion greens for a beautiful finish and an extra burst of freshness. This fried rice is incredibly simple to make with basic ingredients, yet it delivers an amazing flavor. It’s a perfect, satisfying meal for one. Give this easy and tasty scallion fried rice a try!
