This recipe uses a special method where blueberries are mashed into a soft consistency, ensuring your child can enjoy it safely and deliciously.   • 1 Egg
  • 100g Cake Flour

First, prepare 10g of butter and 100g of fresh blueberries in a bowl. These will be the core components for your soft bread.

Place this bowl into a larger bowl that is filled with hot water for a double boiler setup. Once set up, start melting the butter and blueberries together while mashing them gently with a spatula. For a smoother process, you can also use clean hands with a plastic glove to mash the ingredients thoroughly until well combined and lump-free.

It’s crucial to mash the blueberries very finely so that there are no whole pieces that could be a choking hazard for your baby. Ensure the mixture is smooth and free of any noticeable lumps.

Once the blueberries and butter are well combined and mashed, remove the double boiler bowl from the hot water. Add one egg and use a spatula to mix it in thoroughly until the batter starts to become slightly cohesive.

Sift 100g of cake flour (ideally sifted twice for a lighter texture) into the mixture. Gently fold the flour in using a spatula, cutting through the batter rather than stirring vigorously, until just combined and no dry flour streaks remain. Overmixing can lead to a tough bread, so stop as soon as the flour is incorporated.

Once the batter forms a cohesive mass, divide it into your mini pound cake molds. You can use a spoon or a piping bag for neatness. Fill each mold about two-thirds full to allow room for the bread to puff up during baking.

I’ve divided the batter into 3 portions for smaller, baby-sized portions, but you can also divide it into 2 portions for thicker loaves, depending on your preference.

Bake in a preheated air fryer at 170°C (340°F) for about 15 minutes. Keep an eye on the bread to prevent burning. To check if it’s done, insert a skewer into the center; if it comes out clean, the bread is ready.
